I am NOT a "Dieter" I love FOOD! 

Remember FOOD is for Nourishing your Body when our bodies are not nourished our health WILL Decline! Over eating is just detrimental as under eating!

Properly Prepared Nuts:

Soak nuts overnight in water with the following:

1-2 tbl Apple Cider Vinegar

1-2 tbl sea salt (I use Celtic)

Drain nuts, spread evenly on a pan lined with unbleached parchment paper. Place in oven or dehydrator at 150 degrees or as low as your oven will go. Remove when nuts are crunchy - usually takes about 10 hrs.

WHY soak/sprout? Nuts, grains, legumes, seeds and beans all contain phytic acid which will leach our bodies of essential minerals (phosphorus, zinc, magnesium, calcium, etc.) Constant intake of foods improperly prepared can lead to tooth decay, osteoporosis, iron deficiency anemia and rickets. 

Cassava Flour Homemade Tortillas - YUMMY! and so EASY!

NOTE: tortilla press isn't necessary but sure is quick. Some use a rolling pin.

Ingredients:

Cassava Flour

Sea Salt

Oil (I use coconut because they are cooked at a relatively high heat)

Water

This is a Chopped Salad I prepare weekly. Ingredients subject to change with Organic vegetable availability. Anything is optional. I use my Salad Master Food Processor to chop.

The Usual Suspects:

Beets (any color, but note the red ones will turn your entire salad RED)

Carrots

Cucumber

Celery

Radish

Ginger

Bell Pepper (if you can tolerate night shades)

Asparagus (chopped by hand)

Spring Onions (chopped by hand)
